Taste excites us. Passion drives us. Commitment compels us. We wanted a party so we opened a hotel. We craved mouth watering Qld Rum so we made our own. Our friends liked gin so we opened a distillery to make choosing them a present each year easy. We drink beer so we started a Brewery. We aren’t always logical, but we are always fun.
With artistic flair and an inability to behave ourselves, we believe in creating amazing memories and mayhem with beautiful beverages. Make your mark in this world. Be courageous. Play to your strengths. Tough ask when what you are good at is drinking, but we’re giving it a bloody good crack.

Sun dripped sugar cane from the local Ingham and Sarina regions. Our aging rums and gins have as much character as our awe inspiring landscape and our beer is straight up good going.

From ingredient to bottle
Rum
Local sugar cane is harvested and crushed. We take the by-product of creating sugar, the dark alluring sweet syrup, Molasses, and add yeast and water. The result is a sweet dark alcohol which is then place through our stills to boil off water and concentrate the alcohol. We then age our rum for at least two years in oak barrels imparting more flavour and smoothing its moonshine rough edges.
So how if we opened in 2022 can we open with rum already? While we are waiting for our NQ Rums to mature we procure Qld Rum from a great distillery further down south. We then add our spiced magic and rest it again on oak before bottling.
Gin
Our gin follows the first few steps of our rum. It is made from 100% locally sourced sugar cane molasses, which mixed with water and yeast, creates a sweet alcohol. The alcohol is then concentrated through distillation. A different shaped still is used so that, after many iterations, the resulting spirit is as neutral in flavour as possible. To the vodka we add our mystical botanicals and alluring juniper, and our heavenly gin is born.
Beer
Our beer is straight up. So is our process. We get water, use it to dissolve the sugar out of grain, throw in some hop flowers for flavour and stability, encourage yeast to eat the sugar and poop out alcohol. Boom. Beer. We’re in the tropics so we prefer cold. ice cold, so we add bubbles and chill to nigh on zero. Boom. Get it into yah.

We use 35% less water than the average brewery.
Where ever feasible we source local ingredients.
We support a bottle return policy. Return your spirit bottles to us in good nick and we will refund you $2.
We repropose spent grain. All our spent beer grain is used by local farmers to supplement their animal’s feed.
We use recycled products where possible in all our building works
Water management is a big issue in brewing. It takes an average brewery 6-8L of water to produce every 1L of beer. When you factor in growing barley, hops, the malting process, etc., it takes around 168L to produce a pint 570ml of beer, that is 295L per 1L of beer. At CLoakey’s our onsite production using sustainable tropical rainwater and we are 35% more water efficient than the average brewery.

My great grandfather was born under a tree down Boggo Road, Brisbane, where the Queensland Irish immigrants camped for years awaiting housing in the young colony. He was one of the few white folks of the era that could speak the first nation logan language, having spent more time in the neighbouring aboriginal camp then at his own. And so it is with a long family history of respect I say…
